El Programa
Forty agave spirits, twenty-three small producers, two trips a year to Mexico. The bar is the reason a lot of guests come back. We pour generously, and we will tell you what we know.
We buy from producers we have visited. The room knows their names; we are happy to walk you through them.
Two-ounce pours by default, in clay copitas with a salt and orange rest. No tiny tasting glasses unless you ask.
Three-pour tasting flights are built around what is open and pouring well. Tell your server how you usually drink, and we will go from there.

Cócteles
Five anchors and a rotating menu of three or four seasonal builds. Most are agave-led; a couple are not.
Reposado tequila, piloncillo cordial, mole bitters, smoked orange.
Espadín mezcal, tomatillo amaro, blanc vermouth.
Blanco tequila, fresh lime, agave, salt-and-chile rim.
Reposado, fresh grapefruit, lime, sea salt, soda.
House-fermented pulque (weekends only), egg white, lime, mezcal float.
Reservar
The bar is six stools and the best seat in the house if you are here for the program. Walk-ins welcome any night, or reserve a stool ahead of a tasting flight.
